This is correct; Moneydance only finds top-level categories with the
first character you type.  But once you have selected that top level
with just one or two characters, you can type ":" and choose the next
level category, then ":" and the next level.

It's not something you're doing wrong; this is how Moneydance was
designed to work.  If you would like it to work differently, I would
suggest that you file an enhancement request to that effect.

Since Moneydance tends to remember the category used whenever you pay
money to the same Payee again, it doesn't seem like you should have to
be re-entering the category over and over.
