You can probably (on a copy of your data file, just to be safe) delete the
existing reminder and payments for your loan and then re-create the reminder
but back-dating the starting date for the reminder to when you want the
principal/interest payments to start. You can then just accept each
"overdue" loan transaction reminder, assuming the interest is calculated
correctly for your loan.
